raw vegan vanilla latte cheesecake


Although I’ve never been a big coffee drinker the smell is so enticing and I can’t get enough of coffee flavoured things (think coffee chocolate, tiramisu etc).

So when I received some amazing cold drip coffee from First Press Coffee, it seemed only natural to combine coffee with my love of raw cheesecakes! Cold drip coffee has several benefits over hot brewed coffee; lower acidity, easier on the digestive system, increased energy levels without the jittery feeling, and no bitter aftertaste. This vanilla latte cheesecake is raw, vegan, gluten free and refined sugar free, perfect to enjoy as dessert by yourself or to share with friends and family!




For the base:

  • ½ cup almonds
  • 3tbsp coconut oil
  • 3tbsp rice malt/maple/agave syrup
  • ½ tsp vanilla essence
  • 1tsp carob powder

For the filling:

  • 1 ½cup raw cashews (soaked for 8h or overnight)
  • 6tbsp rice malt/maple/agave syrup
  • 2tbsp coconut oil
  • 50mL Honduras coffee
  • 2tsp carob powder
  • 2tbsp vanilla essence

For the marble swirl topping:

  • 2tbsp carob powder
  • 2tbsp coconut oil


For the base:

  • Pulse or process nuts (in a blender or food processor) until they resemble crumbs
  • Transfer to a bowl, add all the other ingredients and mix until well combined
  • Pack tightly into an 11cm spring form cake tin or pie tin and place in freezer

For the filling:

  • Blend or process cashews (in a blender or food processor) until they resemble a smooth batter
  • Transfer to a bowl, stir in all other ingredients and mix until well combined
  • Pour mixture onto base

For the marble swirl topping:

  • Stir carob powder and coconut oil together until smooth
  • Using a chopstick or the back of a spoon, swirl the topping into the filling
  • Return cheesecake to freezer for at least 2hours or until firm before cutting and serving

    Maybe you should clarify that this cheesecake is minature?! 11cm wide cake tin?? It even looks like you’ve tried to make it seem like a bigger cheesecake.

    • Well it says to place in an 11cm tin, so I’m sure its size is made clear haha? I’m not sure how I’d made it seem larger than it is.. X
